Last year I had the privilege to enjoy a Cire Trudon candles inspired High Tea at Waldorf Astoria. It was such a treat, that I couldn’t let the new Dutch Master Painter’s High Tea opportunity pass me by. The High Tea has been known to be exceptional for many years. Chefs prepare unique culinary experiences every season and I am told they manage to outdo themselves repeatedly.
This season Waldorf Astoria Amsterdam is paying tribute honoring the Dutch masters of painting by transforming their world-famous works into savory and sweet delicacies. During the 17th century when Waldorf Astoria Amsterdam was built, famous Dutch painters worked on their iconic paintings on the Herengracht in Amsterdam. Get ready to enjoy savory creations such as cultural history. From “The Girl with a Pearl Earring” to “The Milkmaid’.
A tip of the veil; The first dish consists of an oyster shell filled with a sauce of different types of caviar and oyster. The edible pearl is made of salmon tartare. With the Milkmaid in mind, the chef created a brioche toasted in brown butter with panna cotta, finished with sweet bread crumbs.
Not only is ‘The Potato Eaters’ by Vincent van Gogh transformed into potato crackers with a remoulade of feta cheese; Johannes Vermeer also has a central role at the table. His works ‘Girls with the Pearl Earring’ and the ‘The Milkmaid’, among others, will be featured. Back in the day the first sweet sensation also starts with a work of art by Johannes Vermeer. ‘The Girl with a Pearl Earring’ is transitioned into a cream puff made of lychee with shiso and white chocolate. Oh my… And of course, the beautiful sunflowers, the series of stills by Van Gogh is not left out. Should I say more?
